Join Chef Judy and her team as share with you the secrets of healthy baking. Learn to make 5 different types of gluten free cakes, and also understand and apply the theoretical knowledge learnt in making cakes. You will also understand the different functions and roles of different ingredients.

What to expect:

  • Introduction to ingredients and flour substitutes
    • Brown rice flour
    • Rice flour
    • Sorghum flour
    • Corn flour/Tapioca starch
    • Xantham Gum
    • Acid base (lemon juice, vinegar)
  • Different methods in production of gluten-free sponge cake and developing structure
  • Basic baking science, infusing natural flavours (e.g., tea)
  • Blending different proportions of flours to achieve the correct consistency, flavour and texture
  • Make 5 types of cakes
    • Matcha Gluten Free Cake
    • Earl Grey Lavender Gluten Free Cake
    • Gluten Free Chocolate Fudge Cake
    • Gluten Free Red Velvet Cake
    • Citrus Gluten Free Cake
