In this 7 Day Professional Cafe Running Course (first in Singapore), you will learn the mechanisms behind operating a cafe, from developing your business, sales, marketing, consumer psychology, retail and operation, product and menu development, logistics and inventory management. On top of the theoretical aspect of the course, you will have a hands-on opportunity to do market research and site visits, training in our kitchen with our head chef, and basic barista training.
Module 1 – Business Development
In this module, we will how to develop (or refine) your business model and concept, and understand the mechanics of a F&B business. You will conduct a SWOT (Strength, Weakness, Opportunities, Threats) analysis on your business, and establish your unique selling point and identify potential clients. You will also conduct market research and visit other cafes (and Caffe Pralet) to analyse their business model.
Module 2 – Sales, Marketing and Consumer Psychology
After developing your business model and concept and establishing your USP, understand the mechanics of marketing your product and expand your market presence by engaging in effective marketing and sales strategies. Understand how the consumer thinks and leverage on your sales and marketing campaign.
Module 3 – Café Operations
Learn and have hands-on experience of daily operations in our café (internship offered, subject to availability and suitability). Determine your manpower and staffing requirements, and formulate your job staff’s description. Understand and plan for professional development and career advancement for your staff as part of staff retention. Also, get the opportunity to develop your own Standard Operating Procedures, work-flow diagrams and daily stocktaking/inventory systems.
Module 4 – Logistics and set-up
Leverage on our experience as we introduce to you commercial kitchen/café equipment and how to use them, and basic kitchen set-up and layout planning.
Module 5 – Understanding your product and Product Development
In this module, you will get the opportunity to participate in a hands-on class in bread, cake and coffee making. Understand your product and gain insight to the development and production of staple foods in cafés. Learn from our in-house Chef as they share with you the importance of menu development and planning, waste management, and identifying latest food trends.
Practical and Theory Exam
On the final day of the course, you will sit for a theory examination followed by a practical exam. You will have the opportunity to demonstrate your understanding of the course materials –develop a business idea, and translating it to a product and selling and marketing it. A certificate will be issued upon completion of the course and exams.
